Lego Mini Cakes Cupcakes

Gabriel's sixth birthday is on Monday. His request this year was for Lego cupcakes, but he didn't want traditional cupcakes with a lego chocolate piece on top. He wanted cakes that looked like Legos.

I started with the Wilton mini-loaf pans.

When the cakes were done I removed them from the pan. They looked like this...

So I then leveled the tops and then flipped them upside down.

Taking Dots candies, I cut them down by a third.

Using commercial chocolate icing I adhered them to the new "top" of the cakes.

Next I made ganache using the Wilton recipe of heavy cream mixed with chocolate wafers. I purchased the colored wafers in red, blue and yellow so all I had to do was melt them and mix with the heavy cream. I poured them over the top. The cakes had been placed on wire cooling racks so that the excess dripped on pans below and could be reused.

After letting them set, I moved them to my favorite "mode of transportation" for large numbers of cupcakes and small cakes to school. I line the inside of a pizza box with tin foil and place them in there. It is large enough to hold the numbers I need and I don't need to worry about the box coming home after school.

He is super excited about them! Here is the finished product...

Things I learned for the next time, if there is a next time. Chocolate is not the ideal base color to try and cover, but as that is Gabriel's only cake flavor he wants it's what I had to work with. Yellow is a little too translucent for the desired effect I wanted. Also, try to match the dots color to the final ganache color. I realized too late that I should have done only yellow on the yellow ones.

Overall I am super pleased, and as they are chocolate cake covered in basically white chocolate ganache they should be incredibly delicious!
