Sweet Smarties Mini Cupcakes & Giveaway (Ends 10/3) #IamASmartie

I could not wait to do this Smarties post!  Last week I showed you how to be crafty with Smarties by making a candy airplane.  Today I got to bake with Smarties, and we all know how much I love to bake!

I wanted to do a special treat centered around Smarties, so I put Mega Smarties in the middle of my mini cupcakes!  To make these I used mini muffin tins, bright cupcake liners, Mega Smarties, traditional Smarties rolls and whatever cake mix and icing you prefer.

I then filled each of the lined cupcake tins half way with batter.  Then I placed on Mega Smartie on top of that.

Then I topped with the remaining batter, being sure to completely cover the Mega Smartie.

Then bake as normal.  Once cool ice the cupcakes however you desire.  I used my tried and true method of an icing bag with the 1M Wilton tip I so dearly love.  The swirl is so easy and yet so impressive looking!  Then I just added five of the traditional smaller Smarties on top.

When you take a bite there is a whole layer of Mega Smarties sweetness in the middle, still with a bit of crunch!  It is an unexpected and sweet surprise!  I cut one open so you can take a look...

The mini cupcake size is perfect, just two bites worth.  It is definitely sweet, and a larger cupcake might be too much.  But this will definitely hit the spot with any Smartie lover!

I couldn't resist and set up a bunch on a cupcake stand.  This would make a great centerpiece for a candy themed party, don't you think?
